HUMMUS


I love hummus; I could eat it by the spoonful straight out of the bowl. This is my fail safe recipe for fabulous hummus.

Ingredients

2 tins of chickpeas (drain the liquid from the tins)

3 peeled garlic cloves

3 desert spoons of tahini

Juice of 2 lemons

3 or 4 teaspoons of olive oil (optional)

Salt

Freshly chopped coriander

Directions

Add the drained chickpeas and the garlic cloves to a food processor and blend until combined.

Add the tahini and just over half the lemon juice and season with a good teaspoon of salt. Blend again.

Add the olive oil. Blend again.

Taste. Add more lemon juice and salt to suit your taste.

Drizzle over a little olive oil once decanted into the serving bowl. Scatter with freshly chopped coriander.

You can pep up your hummus by adding spices. Add couple of tablespoons of harissa with just half of the olive oil to give a little spicy kick.
