Raspberry fro-yo!


Fro-yo aka frozen yoghurt is so easy to make. You can make this into lollies, as pictured here, or just make a tub. Packed full of juicy raspberries and creamy yoghurt, this will satisfy any sweet cravings and help to cool you off on a warm day. It is made with all natural ingredients so is a great one to give to the kids. Fabulous as a lolly or cool treat on a warm day but, for those cooler evenings, it also works well paired with my raspberry crumble slice.

Makes about 7 lollies or 1 tub

Ingredients

300g juicy raspberries

Juice of 1 lemon

90g of runny honey

400g of greek yoghurt

Directions

Place the raspberries and lemon juice into a small pan.

Heat over a low heat for approximately 10 minutes, or until the raspberries starts to break down. Remove and set aside to cool.

Place the yoghurt and honey into a jug and mix well to combine.

For a tub...

Decant the yoghurt into the tub. Pour over the raspberry mixture and then use a skewer to create a ripple effect. Place into the freezer for at least 4 hours. Remove 20 minutes prior to serving.

For lollies....

Place a large tablespoon of the raspberry mixture into the bottom of each of the lolly moulds.

Top each mould with 2 tablespoons of the yoghurt mixture.

Repeat the layering process until the moulds are filled.

Insert a skewer into the mould and wiggle up and down to create a marbled effect.

Place the moulds into the freezer for at least 4 hours (overnight preferably).

To remove the lolly from the mould, place the mould under warm running water until the lolly releases.

Feeling a little naughty?

Smash up 2 crunchy bars and add them to the mixture before placing in the freezer.
