Baked nectarines


This is the easiest recipe that delivers amazingly tasty results - a total no-brainer. This makes a perfect breakfast when combined with some greek honey and some granola - just pop the nectarines in the oven whilst you have a shower, and then its a simple matter of spooning out the yoghurt and granola and Hey Presto, you have a delicious breakfast that can't help but start your day off the right way. It also makes a gorgeous dessert when combined with a dollop of mascarpone or some good ice cream (try it with my easy-peasy salted caramel ice-cream).

Serves 2

Ingredients

2 ripe nectarines, halved and de-stoned

4 tsp honey

1/2 tsp vanilla extract

10 pistachios, shelled and lightly crushed

Directions

Preheat the oven to 190 degrees C.

Place the halved nectarines into a baking tray.

Place the honey and vanilla extract into a bowl and mix well.

Drizzle the mixture evenly over the top of the nectarine halves.

Place the nectarines into the oven for 15-20 minutes (if you're nectarines aren't quite ripe, leave them in the oven for an extra 5-10 minutes to soften).

Remove.

Serve with yoghurt/mascarpone/ice-cream and a sprinkle of crushed pistachios scattered over the top.
