Chewy peanut butter, oat and choc chip anytime bars


Whether you want a quick breakfast on the go, a mid-morning pick me up, a little lunchtime treat or a post workout refuel, these delicious bars, full of protein-rich goodness from the oats and peanut butter, will give you a welcome energy kick. These delicious bars are the perfect blend of crunchy, nutty and chewy and they are ridiculously easy to make (infact they are great one to make with kids, as they can have fun squishing all of the ingredients together). Made with natural ingredients and refined sugar free (unless you include those cheeky chocolate chips), they are the guilt free treat that you can enjoy anytime of the day.

Ingredients

200g rolled oats

2 tbsp coconut oil, melted

2 tbsp honey

50g natural peanuts, lightly crushed

200g medjool dates, pitted

130g smooth peanut butter (Whole Earth is good and made with 100% peanuts)

100g honey

50g maple syrup

30g puffed rice

80g chocolate chips (optional, but lovely!)

1 tsp vanilla extract

pinch sea salt

Directions

Preheat the oven to 180 degrees C.

Mix the oats, melted coconut oil, peanuts and honey together and then spread out onto a baking tray.

Place in the oven for 15 mins (take out half way and mix through to ensure that they cook evenly) until golden brown.

Remove and allow to cool completely.

Place the dates, honey, maple syrup, peanut butter, vanilla extract and sea salt into food processor and blitz until smooth.

Add 3-4 tbsp water to loosen the mixture and blitz again.

Add this mixture to the oats, puffed rice and choc chips and mix well to combine (this requires a bit of 'elbow grease' as my dear Nan would say!).

Transfer to a baking dish and press down with the back of a spoon.

Place into the fridge to set for 1 hour.

Remove and slice into bars.
