
This is one of my all time favourite dishes to eat when I want something that tastes great but also makes me feel good. It has the added benefit of being super quick to prepare, about 15 minutes in total (the quinoa and rice is from a pack that is pre-cooked, so just needs heating up). It's packed full of goodness and the harissa gives it a fiery kick. If you're feeling really hungry you can also top it off with a sunny side up fried egg.

Ingredients
1 pack of spicy quinoa and wholegrain rice with chilli (Seeds of Change is really good)
2 teaspoons of harissa (Belazu's rose harissa is lovely)
400g tin of chickpeas, drained
200g spinach
6 tomatoes, halved
Tenderstem broccoli
For the chunky guacamole:
1 ripe avocado
1/2 red onion, finely chopped
1 medium tomato, seeds removed and then finely chopped
Juice of 1 lime
1/2 red chilli, finely chopped
1 tablespoon of finely chopped coriander
Salt and pepper
Method
First, make the guacamole.
Remove the skin and stone from the avocado.
Roughly chop the avocado flesh (as big or as small as you like) and place in a bowl.
Add the chopped tomato flesh, chopped red onion, chill and lime juice.
Combine well and then add the lime juice. Mix again.
Season to taste.
Add the fresh coriander and mix again.
(I struggle not to eat most of this before the rest is cooked!)
To make the rest, heat a wide pan over a medium heat.
Add a tablespoon of oil.
Empty the contents of the quinoa and rice pack into the pan along with a couple of teaspoons of harissa (add more of less depending on how spicy you like it).
Add the chickpeas to the pan, combine well and heat for 3 - 4 minutes, mixing regularly.
Add the spinach to the quinoa, rice, chickpea and harissa mix and stir to combine (no more than 1 minute).
Remove from the heat and divide between two plates.
Season the halved tomatoes, add a little more oil to the pan, and gently heat the tomatoes, cut side down, for 1-2 minutes until lightly golden.
Remove and place alongside the quinoa and rice mixture.
Dollop a good healthy spoonful of the guacamole on the side.
Enjoy!
Feeling peckish? You can add a little extra protein by frying an egg and serving alongside.
