Sometimes, you just NEED a toasted cheese sandwich. We used to have one of those sandwich toasters that left grooves in the bread as it toasted, and whilst I'd quite happily eat the product, I wasn't always entirely satisfied as there were often bits without cheese, or bits that weren't fully toasted, plus the toaster device itself was a ruddy nightmare to clean after! This recipe produces a toastie of the highest order- melting, unctuous cheese sandwiched between buttery, crispy fried bread (and it's easy to clean the pan afterwards). Very indulgent, but sometimes a little bit of what you fancy does you good!
Serves 2 (or 1 hungry person!)
Ingredients
4 slices of bread (I like to use a good sourdough but any bread will work)
120g mature cheddar cheese
Salted butter
1 tbsp oil
Directions
Heat the oil in a frying pan over a low to medium heat.
Butter each slice of bread generously, on one side only.
Place 2 slice of bread into the frying pan, buttered side down.
Arrange the cheese on top of the slices of bread, so that it is fully covered and in one layer.
Place the other slices of bread on top, buttered side up.
Fry the sandwiches over a low to medium heat for approximately 3 minutes (press down with a spatula whilst cooking)
Use a spatula to carefully flip the sandwiches, they should be beautifully golden brown and crispy (if not fry for a little longer before flipping).
Fry on the other side for a further 3 minutes, again pressing down with a spatula as they cook.
Remove from the pan, slice in half and devour!
