Ready in 10 minutes and ridiculously tasty, this amazing soup will become a go-to dish when you're in a hurry but want something really tasty and good for you. It's so tempting to reach for processed foods when you're tired and hungry, but they often leave you feeling slightly empty and unsatisfied - this soup is rich in nutrients and packed full of zingy, fresh flavour and will leave you feeling nourished and warm. This is one of my favourites, so I really hope you enjoy it.
Serves 4
Ingredients
1 tbsp olive oil
3 spring onions, finely sliced
Small bunch of fresh coriander, stalks finely chopped and leaves reserved
1 red chilli, sliced (deseeded if you want a little less heat)
1 clove of garlic, crushed
2 tins of chopped tomatoes
3 roasted red peppers, sliced into strips (buy a jar - you normally get 4 or 5 peppers in a jar)
1 stock cute (I like to use chicken, but vegetable works just as well)
400ml of just boiled water
Juice of 1 lime
Sea salt and black pepper
To serve
100g feta, crumbled
Reserved leaves of the coriander, roughly chopped
Directions
Heat the oil in a wide, heavy based pan.
Add the coriander stalks and spring onions, and gently fry for 2 minutes.
Add the sliced chilli and crushed garlic and fry for a further 30 seconds, stirring regularly.
Tip in the chopped tomatoes and the sliced red peppers, increase the heat slightly, and fry for a further 2 minutes.
Crumble the stock cube into a jug and pour over the boiled water, mix well.
Pour the stock over the tomato and pepper mixture and stir to combine.
Add the lime juice and mix again.
Season with sea salt (not too much as the stock cube contains salt) and black pepper.
Decant the mixture into a food processor and blitz until smooth.
Divide the mixture between serving bowls.
Crumble over the feta and sprinkle over the coriander leaves.
Serve immediately.
Delicious served with a hot slice of buttered sourdough.
