Easy peasy spicy rice with halloumi and beans


This is a perfect midweek meal - cheap, easy, ready in about 10 minutes and tastes bloomin' lovely. When you've had a hectic day or week a pack of precooked rice and quinoa can be a godsend (I've always got a stash of 5 in the cupboard) as it is a great foundation for a quick, tasty meal. All it takes to elevate a simple pack of rice and quinoa into a delicious dish is a few spring onions, some french beans, a few tomatoes, some cubes of halloumi and a few teaspoons of warming Moroccan spices. Top it off with a squeeze of lemon and you've got yourself a delicious dinner. You won't believe that something that takes so little time to make can taste so good.

Serves 2

Ingredients

1 tbsp olive oil

20g butter

8 spins onions, finely sliced

150g fine french beans

12 cherry tomatoes, halve

200g halloumi, cut into bitesize cubes

1 tsp garlic paste (buy a jar) or 2 crushed garlic cloves

240g pack quinoa and rice pack (Seeds of Change is really good)

2 tsp Ras el Hanout

1 tsp rose harissa (Belazu is lovely)

2 tsp tomato puree

Juice of 1/2 lemon

Sea salt

Pea shoots to scatter over (optional)

Directions

Warm the butter and oil in a wide heavy based pan.

Add the spring onions and french beans and fry for 3 minutes.

Add the tomato halves and the halloumi cubes and fry for a further 3 minutes.

Add the garlic paste and fry for a further 30 seconds, stirring continuously.

Stir in the pack of quinoa and rice along with the Ras el Hamont, harissa and tomato paste.

Cook for 2-3 minutes, stirring at regular intervals.

Squeeze in the juice of half a lemon and add a sprinkle of sea salt.

Serve immediately.

Scatter over the pea shoots just before serving (if using).
