These little squares of gorgeousness make a perfect, guilt free treat any time of the day. If you feel yourself lagging and need a little pick me up, then these no bake flapjack fudge squares will give you an extra kick of energy to boost you through the day. Totally refined sugar free and packed full of nutritious peanut butter and mighty oats, they also make a perfect mid or post workout snack as they are high in protein to help build and repair tired muscles. These are also a great treat for the kids, as they are made with natural ingredients (also a great treat to make with the kids as it's just a matter of mixing the ingredients and pressing/pouring into a tin).
Ingredients
Base
190g oats
70g raisins
4 tbsp maple syrup
60g coconut oil
80g crunchy peanut butter (Whole Earth crunchy peanut butter is my preferred choice)
pinch of sea salt
Fudge layer
90ml maple syrup
80g peanut butter
100g coconut oil, melted
1 tbsp cacao powder
Topping
200g 70% dark chocolate
Directions
Base
Place all of the ingredients into a food processor and blitz until combined.
Firmly press the mixture into a greased tin (approximately 30cm by 20cm).
Place in the freezer for 15/20 minutes to set.
Fudge layer
Place the coconut oil into a saucepan and heat over a low heat until melted.
Add the rest of the ingredients and stir together to combine (it should be quite thick).
Remove the base from the freezer and pour the fudge over the flapjack base.
Place in the fridge or freezer to set.
Topping
Place the chocolate into a bowl and place on top of a saucepan with 2cm of water in the bottom, over a low heat.
As the water in the pan simmers it will melt the chocolate in the bowl above, stir at regular intervals.
When the chocolate has melted, carefully remove from the heat and pour over the set fudge layer.
Place in the fridge to set.
When set, remove from the fridge and cut into 5cm squares (easier to do if you allow the fudge flapjack to reach room temperature, and then use a sharp knife dipped into hot water). *
Best kept cool in a covered container (can be kept in the fridge).
