Chocolate orange mousse


This is a dreamy dessert that is vegan thanks to the magical properties of the aquafaba that keep the mouse light and fluffy without the need for any eggs or dairy. If you've never used aquafaba it's simply the liquid in a can of chickpeas, but it whisks up just like egg whites and is a perfect egg replacement (not bad for a waste product that you'd normally pour down the sink!). You can add any flavours that you like to this mousse, I've gone for the classic chocolate and orange combination here, as you can't beat that classic Terry's chocolate orange taste, but you could add a few drops of peppermint oil, instead of the orange zest, if you're more of a mint choc lover.

Serves 2

Ingredients

1 can chickpea aquafaba (6-7 tbsp)

3 tbsp coconut oil

4 tbsp cacao powder

4 tbsp maple syrup

Zest of 1/2 or 3/4 navel orange

pinch of sea salt

1/2 tsp vanilla extract

A little extra orange zest and a few cacao nibs for sprinkling on top

Directions

Whisk the aquafaba to stiff peak stage (I prefer to use the whisk on my food mixer as this can take quite a while with a hand whisk)

Melt the coconut oil over a low heat, add the cacao powder, maple syrup, orange zest, salt and vanilla extract and mix together to combine.

Allow the coconut and cacao mixture to cool completely before using a spatula to gently fold into the whisked aquafaba.

Spoon the mixture into two small bowls and place in the fridge to set for 20-30 minutes.

Sprinkle over a few cacao nibs and the extra orange zest before serving.
