Halloumi fries


HOW can I have gone so many years without ever having these before? I've obviously had halloumi, its a staple on our BBQ and a regular addition to a salad bowl or burger, but halloumi fries had eluded me, until now. I caught a video of a street food cart serving these badboys up, and instantly knew that I needed to recreate something similar. They are ridiculously easy to make and DANGEROUSLY good to eat. These halloumi fries are chunky mofo's, so, when fried they turn beautifully crispy on the outside but retain a delightfully soft centre (just like a good chip should be!). This perfect mix of crispy, salty, loveliness combined with spicy yoghurt, tangy pomegranate molasses, and cooling mint is a match made in heaven. Oh my days, chips will never be the same again.

Serves 2 (but I would more than happily eat all of these myself!)

Ingredients

3 tbsp oil

Halloumi, cut into 6-8 chunky chips (approximately 2cm by 2cm at the end)

1 tsp rose harissa

60ml natural yoghurt (approx 2 tbsp)

1 tbsp pomegranate molasses

Pomegranate seeds from 1/2 a pomegranate

Small handful of mint leaves, roughly chopped

A few chilli flakes (optional)

Directions

Mix the yoghurt with the harissa and a pinch of sea salt.

Cut halloumi into large fries.

Use a piece of kitchen paper to pat each halloumi fry dry, as this will help them to crisp nicely.

Heat the oil in a frying pan until hot.

Add the halloumi and fry on each side until golden brown.

Remove and place on serving dish.

Drizzle over the harissa yoghurt and pomegranate molasses.

Top with freshly chopped mint leaves, pomegranate seeds and chilli flakes.

Serve immediately.
