Raspberry and chia seed jam


If you like something sweet with your yoghurt or porridge but want to cut down on refined sugar, then this quick and easy jam is just for you. Not only is it refined sugar free, it's also high in omega 3 fatty acids, antioxidants , calcium and fibre, thanks to the chia seeds. It really is the perfect jam; not only does it tastes good, it also does you good! Ready in literally minutes, it's the perfect way to pep up your breakfast.

Serves 2

Ingredients

150g frozen raspberries

1 tbsp water

1 tsp honey

1 tbsp chia seeds

Directions

Place the raspberries, water, chia seeds and honey into a small saucepan and warm over a low to medium heat until the raspberries break down, about 3-5 minutes (add a little more water if it gets a little thick).

Allow to cool completely.

And that's it, it's as simple as that!

Layer it with greek yoghurt (as pictured), spread on buttered toast, swirl it through your porridge, whatever floats you boat.
