I love cheese on toast, but dish this raises your standard cheese on toast to a slightly posher level! This is the ultimate quick dinner, that is super simple to make, ready in minutes but tastes and looks delicious; and to top it off it looks like you've made a massive effort, when you haven't at all - whats not to like? Also works perfectly as a a brunch dish.
(You could also make mini ones of these on little crostini for a lovely appetiser)
Serves 2
270g cherry vine tomatoes (try and get a mix of yellow and red), halved
2 tbsp olive oil
Sea salt and black pepper
2 tsp dried oregano
50g baby spinach
300g soft goats cheese
1 tsp lemon zest
Black pepper
1 garlic clove, peeled
4 slices of sourdough
Directions
Preheat the oven to 200 degrees C.
Place the halved cherry tomatoes into a baking tray and drizzle over the olive oil.
Season generously with salt and pepper and scatter over the oregano.
Place in the oven for 10-15 minute until golden and soft and they have released lots of lovely juice.
Remove and immediately add the spinach leaves to the tray and toss in the tomato juices and then set aside to cool slightly.
Toast the sourdough until golden.
Rub each slice of sourdough with the garlic clove.
Mash the goats cheese with the lemon zest and black pepper.
Divide the goats cheese between the slices of toast and spread roughly over.
Spoon over the roasted tomatoes and wilted spinach.
Serve immediately.
