This is such a tasty dish, and to make it even more appealing, it's literally ready in 10 minutes, so perfect for those days when you want something tasty, but want it NOW. The fact that you serve it in lettuce cups means that you can do away with the traditions of a knife and fork and dive in with your fingers (I love eating with my fingers!). Naturally gluten free and vegan and a great meal if you are trying to cut down on carbs but don't want to be left feeling hungry. Seriously finger-licking good.
Serves 2
Ingredients
3 tbsp soy sauce
2 tbsp brown sugar
2 tbsp rice wine vinegar
2 cloves garlic, minced
1/4 tsp chilli flakes
2 tsp cornflour
200g tofu, cubed
1/2 tsp chinese 5 spice
1 tbsp flour (optional)
1 red and 1 green pepper, sliced into 1cm strips
3 spring onions, sliced into 5mm pieces
1 red chilli, finely sliced
3 tbsp vegetable oil
Salt and pepper to taste
50g natural cashews
2 tbsp sesame seeds
4 baby gem lettuce, slice off the thick stem and separate into individual leaves
Handful of fresh coriander, roughly chopped (optional)
Directions
Place the soy, brown sugar, rice wine vinegar, garlic and chilli flakes into a bowl.
Mix well to combine.
In another bowl place the cornflour.
Add 1 tbsp of water and mix to a thick paste.
Add the cornflour mixture to the soy mixture and mix well to combine.
Set aside until ready to use.
Toss the tofu cubes in the chinese 5 spice (and flour, if using).
Place a wok or large pan over a high heat.
Add the oil and heat then add the tofu cubes, stir fry for 4 minutes until lightly golden.
Add in the pepper strips and spring onions and stir fry for a further 3 minutes.
Turn down the heat to medium and add the sauce, heat for a further 1-2 minutes, stirring regularly (the sauce should thicken).
Take off the heat and taste for seasoning, adding a little sea salt and/or black pepper if desired.
Arrange the lettuce leaves between two plates.
Spoon the sweet and sour tofu into the middle of the leaves.
Spinkle over the sesame seeds, fresh chilli, toasted cashews, and the fresh coriander.
Serve immediately.
