Bored of your normal breakfast? This colourful, refreshing bowl of goodness will kick start your day and leave you feeling light and energised. Macerating the red fruits in lime juice for a few minutes gives them a zesty kick, and the mint adds a subtle yet refreshing lift. This also makes a lovely snack or an alternative dessert. You could add a little granola if you want something more substantial.
Serves 2 (or 1 hungry person)
Ingredients
150g greek yoghurt
1/2 tablespoon honey
Juice or 1 or 2 passion fruit (depending on how much you like passion fruit, personally I love it, so I use 2)
Couple of drops of vanilla extract
50g raspberries
50g strawberries, quartered
50g watermelon,sliced into small pieces
Juice of 1 lime
Approximately 10 mint leaves, finely shredded
Directions
Place the fruit and lime juice into a bowl and leave to macerate for 5 minutes.
Add the mint leaves, mix together and leave for another minute.
Meanwhile, place the greek yoghurt, honey, vanilla extract and passion fruit another bowl and combine.
Divide the yogurt mixture between two serving bowls.
Spoon over the red fruits.
Serve immediately.
Serving suggestion - add a tbsp or two of granola for a bit of crunch!
