Mango and passion fruit yoghurt pots


Bored of your normal breakfast? These little breakfast pots are a real treat and will help to start your day off the right way. Full of sunshine flavours from the mango and passionfruit, lovely creaminess from the honeyed yoghurt and all topped off with a little crunchy granola (which adds a lovely texture contrast). They're super easy to make, and if you prep them the night before all you've got to do is add a sprinkle of granola, and you're good to go.

Makes 2 portions

Ingredients

1 mango, peeled, stoned and flesh diced into cubes

2 passionfruit pulp

2 tablespoons of water

300ml greek yoghurt

2 tablespoons honey

4 tablespoons of granola

Directions

Place the diced mango, passionfruit pulp and water into a small, heavy based saucepan over a medium heat.

Heat for 8-10 minutes, stirring regularly, until the fruit breaks down and you have a puree-like consistency.

Remove from the heat and allow to cool.

Combine the yoghurt with the honey, mix well.

Spoon 2 tablespoons of the cooled fruit mixture into your serving glasses.

Use a clean spoon to add 2 tablespoons of the yoghurt mixture to each of the glasses.

Repeat the fruit and yoghurt layering process again.

Refrigerate until ready to eat.

Remove and sprinkle over some granola.

Serve immediately, tuck in and enjoy.
