There are some great granolas out there, but they're often packed with sugar, and/or incredibly expensive. So I set myself the challenge of creating a tasty granola, up to the standard of my favourite shop bought one, that tasted amazing but also had no refined sugar. This is the result, and I have to admit that I'm pretty impressed - I've had this most mornings since I made it (with a good dollop of yoghurt, a squeeze of honey and fruit) and I can't tell the difference between this and the one I used to buy. Result!
Ingredients
150g coconut oil
200g honey
350g mixed nuts (I used 100g whole almonds, 150g pecans and 100g hazelnuts - you can add all pecans if you love pecans or mix and match with your favourite nuts)
50g sunflower seeds (optional)
550 g oats
1/2 tsp sea salt
Directions
Preheat the oven to 180 degrees C.
Place a small saucepan onto a set of kitchen scales and zero the scales.
Measure out 150g of coconut oil and 200g of honey.
Place the saucepan onto a low heat to melt the coconut oil and loosen the honey, stirring every now and then with a metal spoon.
When the mixture is runny and combined, remove from the heat.
Place the oats and nuts into a large roasting tray, mix well.
Drizzle the honey and oil mixture over the oats and nuts, mixing well to ensure good coverage.
Ensure that the coated mixture is spread out over the tray (don't pack it down, you want to keep it loose and separate).
Place in the oven for 25-30 minutes (give it a good mix half way through otherwise some of the nuts on the top may catch a little).
Remove and allow to cool completely.
Decant into an airtight jar.
