Blueberry, pecan and honey overnight oats


If you haven't tried overnight oats yet, then you need to. Ridiculously easy to prepare, super tasty and inexpensive; this jar of goodness will have you fuelled up, and ready for action, whatever the day brings. Made with all natural ingredients and refined sugar free.

Serves 1

Ingredients

Overnight oats

150ml almond milk (or 100ml almond milk + 50g greek yoghurt if you like a creamier texture)

60g oats

2 tbsp runny honey

1 tsp cinnamon

1/2 tsp vanilla extract

Pinch of sea salt

100g blueberries

To sprinkle over the top

5 or 6 pecans, roughly chopped

5 or 6 blueberries

Drizzle of honey

Directions

Mix the oats, almond milk (+ yoghurt if using), honey, cinnamon, vanilla extract and salt together in a bowl/container/kilner jar.

Fold in the blueberries.

Cover and leave in the fridge overnight.

In the morning, remove from the fridge * and sprinkle over the pecans and extra blueberries and drizzle over a little honey.

* If you want to warm up your overnight oats, make sure that you use a microwaveable container. Remove from the fridge and place in the microwave for 90 seconds - 2 minutes before sprinkling over the nuts and blueberries and drizzling over the honey.
