'Carrot cake' overnight oats


Overnight oats + carrot cake flavour = breakfast heaven. It takes a few minutes to put this together the night before but it is well worth that little bit of effort. Something special happens as these flavours mingle together overnight; you won't believe that a healthy, nutritious breakfast can taste this good. Made with all natural ingredients and refined sugar free.

Serves 1

Ingredients

150ml almond milk (or 100ml almond milk + 50g greek yoghurt if you like a creamier texture)

60g oats

50g grated carrot (approximately 1 small carrot)

10 pecans, roughly chopped

30g raisins

2 tbsp runny honey

1/2 tsp cinnamon

1/4 tsp ginger

1/2 tsp vanilla extract

Pinch of sea salt

1/2 tsp orange zest (zest of roughly 1/4 of an orange)

Directions

Mix the oats, almond milk (+ yoghurt if using), grated carrot, pecans, raisins, honey, cinnamon, ginger, vanilla extract, salt and orange zest together in a bowl/container/kilner jar.

Cover and leave in the fridge overnight.

In the morning, remove from the fridge *and drizzle over a little extra honey.

* If you want to warm up your overnight oats, make sure that you use a microwaveable container. Remove from the fridge and place in the microwave for 1-2 minutes (depending on how hot you want them) before drizzling over the honey.
